Substitution for rhubarb?
I have been looking at the Christmas recipes and note the use of rhubarb to cut carbs. Hopefully I will be making both the podding and the mincemeat. But I don't have access to a large supermarket and I doubt if I'll be able to find fresh rhubarb. Might it be possible to substitute tinned rhubarb or perhaps another fruit plus lemon juice? Pat |

I'm replying to myself because I have found some fresh rhubarb. So I'll get quite a lot and freeze it ready for crumbles,mincemeat and christmas pudding!. Pat |

Pat Tinned rhubarb works fine. As far as I've been able to discover, there's only one supplier of tinned rhubarb which is unsweetened in the UK (Hartleys) and they only sell it through Safeway (certain branches only). I stock up when I visit a town with a Safeway ... I would imagine that apple would work very well tastewise as a substitute for rhubarb in the recipes, although this would increase the carb count somewhat. Jackie |
